Crockpot Meatloaf

For Serving:

  • Mashed potatoes or roasted vegetables
  • Additional ketchup or BBQ sauce for dipping

Instructions

Step 1: Prepare the Meatloaf Mixture

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, eggs, chopped onion, garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined—be careful not to overwork the mixture, which can make the meatloaf tough.
  2. If using, stir in half of the ketchup-brown sugar glaze.

Step 2: Shape the Meatloaf

  1. Grease the insert of your crockpot or line it with parchment paper for easy cleanup.
  2. Shape the meatloaf mixture into a log or oval shape directly in the crockpot, pressing down slightly to compact it.

Step 3: Add the Glaze

If using the full ketchup-brown sugar glaze, spread the remaining mixture evenly over the top of the meatloaf for a sticky, sweet finish.
