My guests can’t get enough of this dish at dinner parties.
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef and diced onion until the beef is no longer pink and the onions are translucent. Drain any excess fat.
Layer half of the thinly sliced potatoes in the bottom of a greased 9×13 baking dish.
Spread the cooked beef and onion mixture over the potatoes.
Layer the remaining potato slices on top.
In the same skillet, melt the butter over medium heat. Stir in the flour and cook for about 1 minute.
Gradually whisk in the milk, stirring constantly until the sauce is thickened and smooth.
Remove from heat and stir in 1 1/2 cups of the shredded cheddar cheese until melted. Season with salt, pepper, garlic powder, and dried thyme.
Pour the cheese sauce evenly over the layered potatoes and beef.
Sprinkle the remaining 1/2 cup of cheddar cheese on top.
Cover the baking dish with aluminum foil and bake for 45 minutes. Then, uncover and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
Let it sit for a few minutes before serving. Enjoy!
Variations & Tips
For a different twist, try adding some chopped bell peppers or mushrooms to the beef mixture. You can also switch up the cheese—Swiss or Gouda would add a unique flavor. If you’re looking for a lower-carb option, substitute cauliflower florets for the potatoes. And, for an even heartier dish, a layer of cooked bacon crumbles would be a delicious addition.
