Step-by-Step Instructions
1. Prepare the meatballs
In a large bowl, mix the ground meat, egg, breadcrumbs, milk, shallot, garlic, and parsley.
Season with salt and pepper.
Shape medium-sized meatballs with slightly damp hands.
Set aside on a plate.
2. Cook the meatballs
In a large skillet, heat a bit of olive oil.
Brown the meatballs on all sides for 8 to 10 minutes.
Set the cooked meatballs aside on a plate.
3. Prepare the onion sauce
In the same skillet, add a bit of oil or butter and sauté the onions over medium heat until well browned (10 to 15 minutes).
Sprinkle the flour over the onions and mix well.
Gradually pour in the broth while stirring to prevent lumps.
Add the herbs, mustard, and vinegar if using; season with salt and pepper.
Simmer for 10 minutes until the sauce slightly thickens.
4. Combine and simmer
Return the meatballs to the sauce and let them simmer on low heat for 10 minutes so they absorb the flavors and reheat thoroughly.
Taste and adjust seasoning if needed.
