Egg sandwich

  1. Boil the Eggs

    • Place eggs in a saucepan and cover with cold water.

    • Bring to a boil, then reduce heat and simmer for 10–12 minutes.

    • Drain and transfer to an ice bath to cool completely.

  2. Peel and Chop Eggs

    • Peel the cooled eggs and roughly chop them.

  3. Make the Egg Salad

    • In a bowl, combine chopped eggs, mayonnaise, mustard, lemon juice, onion, and celery.

    • Mix until well combined. Season with salt and pepper to taste.

  4. Assemble the Sandwich

    • Toast the bread if desired.

    • Spread egg salad evenly over a slice, top with lettuce or tomato if using, then close with another slice.

  5. Serve

    • Slice and serve immediately, or wrap and chill for later.
