1. Preheat & Prep:
Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
2. Prep the Potatoes:
Peel and thinly slice potatoes (about 1/8 inch thick). Soaking sliced potatoes in cold water prevents browning. Drain well before using.
3. Creamy Sauce:
Melt butter in a saucepan. Add garlic and cook 1 minute until fragrant. Stir in heavy cream and milk; simmer. Add cheeses, stirring until melted and smooth. Season with salt, pepper, thyme, and nutmeg. Remove from heat.
4. Layer & Assemble:
Layer potatoes and sauce in the prepared dish, ending with sauce on top.

6. Bake:
Cover with foil and bake for 45 minutes. Remove foil and bake another 20-30 minutes, until tender and golden.
