Instructions
Step 1: Prepare the Whipped Cream
In a large bowl, beat heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until stiff peaks form. Set aside.
Step 2: Prepare the Pudding
In a separate bowl, whisk together instant vanilla pudding mix and cold milk until smooth and thickened (about 2-3 minutes). Gently fold in half the whipped cream.
Step 3: Assemble the Icebox Cake
In a 9×13-inch baking dish, spread a thin layer of the pudding mixture. Layer with graham crackers (breaking as needed). Repeat layers of pudding, bananas, and graham crackers, ending with pudding.
Step 4: Top with Whipped Cream
Spread the remaining whipped cream evenly on top. Smooth with a spatula.
Step 5: Chill
Cover and refrigerate for at least 4 hours, or overnight.
Step 6: Serve
Slice into squares. Garnish with extra banana slices or graham cracker crumbs (optional).
Cook Notes
- Banana Tip: Use ripe but firm bananas.
- Whipped Cream: Freshly whipped cream is best, but store-bought is fine.
